I am taking a break from the recipes this week, since we were out of town last weekend and gone again this one coming up. The inspiration from last week is shining through, I can feel the growth that has occurred. I got rave reviews tonight for this tilapia, sweet potato and salad meal. I baked the sweet potato and then diced it and tossed it in cinnamon, nutmeg & some brown sugar. I drizzled the tilapia with olive oil and seasoned it with a fish seasoning mix. The salad is a simple combination my sister taught me: romaine, carrots, red onions & some raspberry vinaigrette dressing.
This meal is simple, full of flavors, colors and light enough Dave could head out to teach without feeling heavy!
